The list of starters includes Seared New Bedford Jumbo Diver Scallops Rockefeller with baby spinach, Nueske’s bacon, Pernod, and a béarnaise aioli; Seared Hudson Valley Foie Gras with local honey, local jam, and a toasted crostini; Baked Burgundy Escargot with maître d’hotel butter, lemon zest, fresh herbs, and parmesan reggiano; and House-Ground Mini Burgers with short rib, cheddar, chipotle ketchup, roma slices, and micro herbs.
For entrée’s, highlights include their Famous U-10 Shrimp & Grits with goat cheese, prosciutto, and tomato-garlic butter; Chocolate Chili-Dusted Maple Leaf Farm Duck Breast with foie gras sausage, duck fat spuds, French beans, roasted pineapple, and habanero glaze; and Blackened North Carolina Day Boat Grouper with a cucumber-lime puree, micro potatoes, cipollini onions, gazpacho relish, and micro arugula.
SeaBlue also offers hand-cut USDA Prime steaks, available with or without your favorite fare from the surf. Choose from Filet, Ribeye, or Strip, and pair it with Maine lobster tail, jumbo scallops, crab cake, or grilled or blackened jumbo shrimp. Combinations include Surf & Turf (lobster, potato gratin, French beans, Cabernet demi-glace), Original Sea Blue style (potato gratin, French beans, aged Balsamic), Classic Steak & Potatoes, and Blackened & Blue.
And if you have a little room left, try the chef’s Crème Brulee or Dessert of the Moment, the Flourless Midnight Chocolate Tort, Gourmet Gelato or Sorbet, or a Premium Selection of Artisan Cheese.

The ocean plays a major role in the décor here, with the namesake color dominating the interior. Subdued lighting lends a relaxed and refined ambiance to the room at night, and live fish tanks act as an enhancement to the oceanic feel. And while this is fine dining, it’s also the Grand Strand, so casual attire is acceptable. However, if this is going to be a rare experience, you might as well dress up and look nice for the occasion.
